Our Favorite Homemade Chicken Noodle Soup

If there’s one thing you should know about our family, it’s that we are definitely a soup family once the weather turns chilly! From the first cool days of fall until spring, there’s almost always a pot of soup simmering on the stove.
This homemade chicken noodle soup is one of our all-time favorites. It’s simple, comforting, and perfect for warming everyone up after a long day—or when someone is feeling under the weather.
Ingredients
● 4–6 cups chicken broth (use more or less depending on how large a batch you’d like to make)
● 1 medium onion, chopped
● 4 large celery stalks, chopped
● 1 bunch carrots, peeled and chopped (I usually use baby carrots and slice them into bite-sized pieces.)
● 2 teaspoons fresh basil, minced (or ½ teaspoon dried basil)
● 2 teaspoons fresh oregano, minced (or ½ teaspoon dried oregano)
● 1 bay leaf
● ½ teaspoon black pepper
● 1 bag medium egg noodles (or your favorite pasta)
● 2–4 cups cooked chicken, cut into bite-sized pieces
Directions
1. In a large soup pot, combine the chicken broth, onion, celery, carrots, basil, oregano, bay leaf, and black pepper. Bring to a gentle boil.
2. Stir in the uncooked noodles, then reduce the heat to a simmer. Cover and cook for 8–10 minutes, or until the noodles are tender and the vegetables are cooked but still have a slight bite.
3. Remove and discard the bay leaf.
4. Stir in the cooked chicken and heat through.
If the soup becomes thicker than you’d like, simply add a little more chicken broth until it reaches your preferred consistency. (I almost always end up adding a bit more!)
One of the things I love most about homemade soup is that it’s easy to make your own. Add extra herbs, a little garlic, parsley, or any seasonings your taste buds are craving that day.
Serve with crackers, a grilled cheese sandwich, peanut butter and jelly, buttered bread, or warm rolls. It’s the ultimate comfort food—perfect for cold winter days, cozy evenings at home, or whenever someone in the family needs a little extra TLC.
