Classic Peanut Butter Cookies

Soft in the center, lightly crisp around the edges, and packed with peanut butter flavor, these classic cookies are everything a peanut butter cookie should be. For an extra-special treat, drizzle the cooled cookies with melted chocolate. 🥜🍪

Ingredients

● ½ cup butter, softened

● ½ cup peanut butter

● ½ cup granulated sugar

● ½ cup packed brown sugar or ¼ cup honey

● ½ teaspoon baking soda

● ½ teaspoon baking powder

● 1 egg

● ½ teaspoon vanilla

● 1¼ cups all-purpose flour

● Additional granulated sugar, for rolling


Instructions


1. Make the Dough

In a large mixing bowl, beat the softened butter and peanut butter with an electric mixer on medium to high speed for about 30 seconds.

Add the granulated sugar, brown sugar, baking soda, and baking powder. Beat until combined, scraping down the sides of the bowl as needed.

Beat in the egg and vanilla until combined.

Beat in as much of the flour as you can with the mixer, then stir in the remaining flour by hand.

If necessary, cover and chill the dough until it is easy to handle.


2. Shape the Cookies

Preheat oven to 375°F.

Shape the dough into 1-inch balls and roll each ball in additional granulated sugar to lightly coat.

Place the cookies about 2 inches apart on an ungreased cookie sheet.

Using the tines of a fork, gently flatten each cookie twice in opposite directions to create the classic crisscross pattern.


3. Bake

Bake for 7–9 minutes, or until the bottoms are lightly browned.

Transfer the cookies to a wire rack and allow them to cool.


Optional Chocolate Drizzle

Once the cookies are completely cool, drizzle them with melted chocolate for an extra-rich peanut butter-and-chocolate treat.
