Ingredients
½ cup butter, softened
1 cup granulated sugar
¼ teaspoon baking soda
¼ teaspoon cream of tartar
1 egg
½ teaspoon vanilla
1½ cups all-purpose flour
Cinnamon-Sugar Coating
2 tablespoons granulated sugar
1 teaspoon ground cinnamon
Instructions
1. Make the Dough
In a medium mixing bowl, beat the softened butter with an electric mixer for about 30 seconds.
Add 1 cup sugar, baking soda, and cream of tartar. Beat until combined, scraping the sides of the bowl as needed.
Beat in the egg and vanilla until combined.
Beat in as much of the flour as you can with the mixer, then stir in any remaining flour by hand.
Cover the dough and chill for about 1 hour, or until it is easy to handle.
2. Shape the Cookies
Preheat oven to 375°F.
In a small bowl, combine the 2 tablespoons sugar and cinnamon.
Shape the chilled dough into 1-inch balls. Roll each ball in the cinnamon-sugar mixture until evenly coated.
Place the cookies about 2 inches apart on an ungreased cookie sheet.
3. Bake
Bake for 10–11 minutes, or until the edges are lightly golden.
Transfer the cookies to a wire rack and allow them to cool.
